Recipe : Semi-cooked tuna carpaccio

• 1 tuna cub of fresh tuna 400g
• 10 cl of soy sauce
• 1 clove of garlic
• 3 Cebettes
• 5g of Ginger
• 5cl sesame oil
• 5cl of olive oil


• Squeeze the lemon to obtain a juice. Peel and chop the clove of garlic. Finely chop the steaks. Peel and grate the ginger.
• In a nonstick skillet, fry the tuna on high heat for 30 seconds on each side to keep the inside raw.
• In a frying pan, pour lemon juice, soy, sesame oil and olive oil into the pan to deglaze the tuna. Arrange in a dish and marinate for 1 hour.
• Spread tuna with duck, ginger and sesame. Slice the pavement finely and place on a plate.
