Recipe: Pasta with zucchini

• 300 g tagliatelle
• 500 g small zucchini
• 50 g almond powder
• 150 g fresh goat cheese
• 4 tbsp. liquid cream
• 4 tbsp. tablespoon of olive oil
•	2 cloves garlic
•	Espelette pepper
•	Salt


• Wash and dry the zucchini. Dice them after removing the ends. Peel and chop the garlic.
• Heat half of the oil in a frying pan. Put the garlic back without coloring, then add the zucchini and sauté on high heat stirring, so that they brown, about 10 min.
• At the same time, put salted water in a Dutch oven to cook the tagliatelle.
• Crumble the goat cheese in a small saucepan. Add the cream, the almond powder and the remaining oil, sprinkle with a pinch of chilli. Heat over low heat, stirring occasionally to obtain a creamy sauce.
• Cook the pasta about 6 minutes after boiling again (try to check the cooking), drain quickly, pour into a hot dish, add zucchini and goat sauce, mix and serve immediately.
