Recipe: Cold Cream of Fennel with Pear

Ingredients : 

  • 1 fennel
  • 1 pear
  • 1 yellow onion
  • 1 tbsp. tablespoon of olive oil
  • 1/2 yoghurt (about 60 g)
  • The juice of 1/2 lemon
  • 2 branches of mint
  • 3 or 4 ice cubes

Steps :

  • Slice the onion. Rinse and slice the fennel. Heat the oil in a saucepan, add the onion and fennel, cook for 5 minutes on medium heat while stirring. Add 50 cl of water and a pinch of salt, bring to the boil and cook for 10 minutes. Let cool in the pan.
  • Peel the pear, cut it into pieces. Rinse and thin the mint. Mix the contents of the pan with the pear pieces, lemon juice, yoghurt, ice cubes and mint. Serve chilled with some fresh mint leaves.
